Zucchini, is a very low calorie vegetable; 17 calories per 1 00 grams. Zucchini does not contain saturated fats or cholesterol, and its peel is a good source of dietary fiber that helps reduce constipation and keep your colon healthy. When cooked, it loses much of its vitamins: it remains a good source of potassium which potentially reduces blood pressure, maintains cardiovascular health, and protects bones and muscles.

Storage

At home, place them in plastic bag and store inside the vegetable compartment of the refrigerator set at adequate relative humidity. They can be stored for up to 2-3 days.
